For the base:
200g graham crackers or Digestive biscuits
90g melted
butter 2tbsp sugar (optional)
For the cheese filling:
250g softened
cream cheese 200ml double
cream 100g sugar
200g dragon fruit puree (if you can’t find fresh dragon fruit, You can use canned or frozen dragon fruit puree) 1 tablespoon gelatin
powder (optional, for a thicker effect)
1 tablespoon vanilla or vanilla extract
For decoration:
chopped pistachios for garnish
Fresh fruit: slices of dragon fruit, berries (such as blackberries or raspberries)
Fresh herbs, such as mint or basil (for a touch of freshness)
Instructions:
Make the base:
Mix the chopped crackers, melted butter, and sugar in a bowl. Mix well until you get a sandy and moist consistency.
Press the mixture into the bottom of a springform cake pan, making sure to press it down well to create a solid base.
Bake in a preheated oven at 180°F (350°C) for 10 minutes, then allow to cool completely.
Make the cheese filling:
In a large bowl, beat the cream cheese with the sugar and vanilla extract until smooth.
Add the dragon fruit puree and mix well until smooth.
Add the cream and mix again. If using gelatin, follow the instructions on the package and add it to the mixture.
