Roasted root vegetable fries & herb sauce

🛒Ingredients
2 carrots (200 g)

2 parsnips or long turnips (200 g)

1 small raw beetroot (100 g)

2 tbsp olive oil

1/2 tsp salt

1/4 tsp pepper

1/2 tsp garlic powder (optional)

1 tbsp fresh herbs (dill, thyme or parsley)

For the sauce

3 tbsp mayonnaise

1 tsp mild mustard

1/2 tsp lemon juice

1/2 tbsp finely chopped fresh herbs (like thyme or dill)

Salt and pepper to taste
