Prepare the potatoes:
wash them well and cook them in boiling water for 15 minutes, until they are tender but still firm.
Drain them and let them cool. Empty the potatoes:
cut them in half lengthwise. Using a spoon, lightly hollow out the inside without piercing the peel, so as to form small “bowls”.
Save the removed chair for another recipe (mashed potatoes, pancakes, etc.).
Prepare the beef filling: sauté the chopped onion and garlic in olive oil in a pan.
Add the minced meat and sauté well for 8 minutes. Add salt, pepper, oregano and then pour in the tomato puree.
Let it simmer for 10 minutes to obtain a very tasty filling.
Stuff the potatoes: place the potato halves in a baking dish. Generously fill each half with the beef filling.
Sprinkle with grated mozzarella. Baking: Preheat the oven to 200°C (fan).
Bake in the oven for 15 minutes, until the cheese is melted and lightly browned. Sprinkle with parsley:
