Cantonese rice

  1. Adding vegetables:
    • Add the white part of the spring onion, diced carrots and peas. Cook for a few minutes until the vegetables are tender but still crispy.
  2. Adding rice:
    • Add the cold rice to the skillet or wok. Break up any lumps with a spatula and mix well with the other ingredients.
  3. Seasoning:
    • Pour a little soy sauce over the rice, according to your personal taste. Mix well so that the rice is evenly colored by the soy sauce.
  4. Adding the eggs and green onion:
    • Add the chopped cooked eggs to the pan with the rice and mix well.
    • Also add the green part of the spring onion cut into thin slices.
  5. Service:
    • Once everything is well mixed and heated, taste and season with salt and pepper if needed.
    • Transfer the Cantonese Rice to a large bowl or serving plates and serve hot.
