- Adding vegetables:
- Add the white part of the spring onion, diced carrots and peas. Cook for a few minutes until the vegetables are tender but still crispy.
- Adding rice:
- Add the cold rice to the skillet or wok. Break up any lumps with a spatula and mix well with the other ingredients.
- Seasoning:
- Pour a little soy sauce over the rice, according to your personal taste. Mix well so that the rice is evenly colored by the soy sauce.
- Adding the eggs and green onion:
- Add the chopped cooked eggs to the pan with the rice and mix well.
- Also add the green part of the spring onion cut into thin slices.
- Service:
- Once everything is well mixed and heated, taste and season with salt and pepper if needed.
- Transfer the Cantonese Rice to a large bowl or serving plates and serve hot.
