Potato and cheese meatballs wrapped in a mix of vegetables in tomato sauce

Salt – to taste

Sauce:
1 tbsp tomato puree
1 cup water – (200ml)
For sprinkling:
Grated cheddar – to taste
Procedure
Preparing the Potatoes
Cooking the Potatoes: Place the chopped potatoes in a saucepan, cover with water and cook on a low heat until soft. This will take approximately 20-25 minutes. Once cooked, drain and set aside.
Preparing the Dough
Preparing the Vegetables: Roughly chop the onion, fresh parsley, peppers and garlic cloves. Place in a blender and blend until smooth.
Mincing the Chicken: Add the chopped chicken breasts to the blender and blend until finely chopped. Add the blended vegetables, ground black pepper, ground red pepper, dried cumin, dried mint, salt and olive oil. Mix everything well until you get a uniform mixture. Cover with cling film and store in the refrigerator for 30 minutes.
