1- To begin with, in a cup we put the yeast together with the sugar, 1 tablespoon. of flour, 1 tablespoon. of water and mix well until a semi-liquid paste is formed. We reserve for about 10 minutes until it doubles in volume.
2- In a bowl, put the remaining flour together with the salt. Mix well and in the center put the remaining water together with the semi-liquid paste and mix until a homogeneous mass is formed. At this point, if you are in a hurry, you can do it immediately, otherwise I recommend letting it rest for about 20 minutes.
3- Take a pan, add a drizzle of oil and leave over medium heat. When it is very hot, put the dough very evenly and wait for it to cook. For a better consistency, I recommend cooking it for 2 minutes, avoiding browning on that side.
