Preparation:
1. In a bowl, combine flour, baking powder, sugar. Then pour in the water and stir until completely absorbed.
2. Now add salt and oil, and mix again.
3. Cover with plastic wrap and let rise for 2 hours.
4. Turn the dough out onto a work surface and make several folds, then form a loaf.
5. Move it to a baking tray covered with parchment paper, cover again with plastic wrap and let rise again for an hour and a half.
6. Prepare the filling: season the tomato sauce with salt, 1 pinch of sugar and oil. Then cut the mozzarella into slices.
7. Then pour the sauce over the dough and roll it out with your hands, pushing it towards the edges. Sprinkle with grated cheese
9. Bake in the lower part of the oven at 200° for 20/25 minutes.
10. Now add the mozzarella and continue cooking in the upper part of the oven for another 5 minutes.
