Magic Lemon Pie

In a separate bowl, lightly beat egg yolks.
Slowly add a bit of hot mixture into yolks (to temper), then pour back into pan.
Cook 2–3 minutes more until smooth and thick.
Remove from heat, add lemon juice, zest, and butter. Mix well.
Pour into the baked crust.
2. Prepare the meringue
Beat egg whites until foamy.
Add cream of tartar (if using).
Gradually add sugar while beating until stiff peaks form.
3. Assemble & bake
Spread meringue over the hot lemon filling (seal edges well).
Bake at 180°C (350°F) for 10–15 minutes until golden on top.
Let cool completely before slicing (this helps it set).
