How to Make a Flourless, Low-Glycemic Apple Pie

Ingredients:

  • 3 apples, preferably sweet and juicy varieties
  • 3 eggs
  • 1 cup chopped almonds
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Stevia or other natural sweetener to taste

Instructions:

  1. Preheat the oven to 180°C and lightly butter a cake tin.
  2. Peel the apples and cut them into thin slices.
  3. In a large bowl, whisk together the eggs, vanilla extract, and sweetener.
  4. Add the chopped almonds, cinnamon and baking powder and mix until the mixture is smooth.
  5. Arrange the apple slices on the bottom of the pan, covering the surface completely.
  6. Pour the liquid mixture over the apples, making sure it is evenly distributed.
  7. Bake for about 30-35 minutes or until the cake is golden.
  8. Once cooked, let it cool slightly before serving. You can enjoy it alone or with Greek yogurt and fresh fruit.
