Ingredients:
- 3 apples, preferably sweet and juicy varieties
- 3 eggs
- 1 cup chopped almonds
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Stevia or other natural sweetener to taste
Instructions:
- Preheat the oven to 180°C and lightly butter a cake tin.
- Peel the apples and cut them into thin slices.
- In a large bowl, whisk together the eggs, vanilla extract, and sweetener.
- Add the chopped almonds, cinnamon and baking powder and mix until the mixture is smooth.
- Arrange the apple slices on the bottom of the pan, covering the surface completely.
- Pour the liquid mixture over the apples, making sure it is evenly distributed.
- Bake for about 30-35 minutes or until the cake is golden.
- Once cooked, let it cool slightly before serving. You can enjoy it alone or with Greek yogurt and fresh fruit.
