Recipe for homemade bread weighing almost 2 kg

Ingredients for sourdough starter (to be prepared the day before):

  • 250 ml of water
  • 250 g wheat flour type 450 (BL55)
  • 40 g fresh yeast
  • 1 tablespoon of oil

Mix everything thoroughly with a wooden spoon for 3-4 minutes, until you have a smooth dough with the consistency of pasta dough. Cover and set aside in a warm place overnight.

Real cake:

  • 510 ml of water (the amount can be slightly adjusted depending on the type of flour)
  • 1000 g wheat flour type 450 (BL55)
  • 7 teaspoons of salt
  • 1 tablespoon of powdered sugar
  • 2 tablespoons of oil, melted butter or margarine
  • The entire sourdough starter was prepared in advance
    1. Place all ingredients in the bowl of a stand mixer or food processor. Knead the dough for at least 10 minutes, until smooth and elastic.
    2. Shape into a ball, cover, and set aside to rise. After the first rise, knead briefly and set aside again until doubled in size.
    3. Transfer the dough to a work surface and shape it into a loaf or small round shape. Place it on parchment paper in a saucepan or frying pan.
    4. Lightly spray the bottom and top of the dough with water. Cover and set aside to rise.
    5. When the dough has doubled in size, cut it with a knife or a very sharp razor blade and spray it with water again.
