Recipe for homemade bread weighing almost 2 kg
Ingredients for sourdough starter (to be prepared the day before):
- 250 ml of water
- 250 g wheat flour type 450 (BL55)
- 40 g fresh yeast
- 1 tablespoon of oil
Mix everything thoroughly with a wooden spoon for 3-4 minutes, until you have a smooth dough with the consistency of pasta dough. Cover and set aside in a warm place overnight.
Real cake:
- 510 ml of water (the amount can be slightly adjusted depending on the type of flour)
- 1000 g wheat flour type 450 (BL55)
- 7 teaspoons of salt
- 1 tablespoon of powdered sugar
- 2 tablespoons of oil, melted butter or margarine
- The entire sourdough starter was prepared in advance
- Place all ingredients in the bowl of a stand mixer or food processor. Knead the dough for at least 10 minutes, until smooth and elastic.
- Shape into a ball, cover, and set aside to rise. After the first rise, knead briefly and set aside again until doubled in size.
- Transfer the dough to a work surface and shape it into a loaf or small round shape. Place it on parchment paper in a saucepan or frying pan.
- Lightly spray the bottom and top of the dough with water. Cover and set aside to rise.
- When the dough has doubled in size, cut it with a knife or a very sharp razor blade and spray it with water again.
