1. In a bowl, mix the water and yeast.
2. Then pour in the flour and start mixing.
3. Add the salt and let it rest for 15 minutes.
4. Then work by hand and start the various rounds of folds with an alternation of 15 minutes.
5. Finally, form a homogeneous dough, divide it into two portions and let it rise for 2 hours.
6. Roll out the dough in the pan and let it rest for another 30 minutes.
7. Season and bake at 180° for 15/20 minutes.
