Does the size of the egg matter?

The size of the egg simply depends on the size of the hen. Large eggs have a nutritional and caloric value proportional to their weight. For pastries (cakes, biscuits, etc.) we generally use medium-sized eggs. Allow 30 g for a white, and 20 g for a yolk. Quail eggs require special cooking.
