Zucchini in carrozza recipe

Preparation:
1. Wash the zucchini and cut them into thin slices lengthwise.
2. Beat the eggs with a pinch of salt and pepper.
3. Dip the zucchini slices in the flour, then in the beaten egg and finally in the breadcrumbs.
4. Cut the mozzarella into thin slices.
5. Take two slices of bread, put a slice of breaded zucchini, a slice of mozzarella and cover with another slice of breaded zucchini, close with the other slice of bread to form a sandwich.
