👩🍳 Procedure

Beat the eggs with the sugar until the mixture is light and frothy.

Add the oil (or melted butter) and continue mixing.

Gradually incorporate the sifted flour with the yeast , alternating with the milk or yogurt.

Add lemon zest or vanilla for flavor.

If desired, join apples or pears to pieces , or raisins or walnuts.

Pour the mixture into a greased and floured 24cm cake tin .

Bake in a preheated oven at 180°C for 40-45 minutes . Test with a toothpick to see if it’s cooked through.

Let it cool and, if you like, sprinkle with icing sugar .

Also excellent the next day, perfect for breakfast with tea or coffee with milk.

It can be stored under a glass bell jar for 3-4 days.

You can replace the fruit with chocolate chips for a more indulgent variation.
