The ricotta cake

Prepare the dough

In a large bowl, beat the eggs with the sugar until light and fluffy.
Add the sifted ricotta, melted butter, vanilla extract, and lemon zest. Stir well to mix the ingredients.
In another bowl, sift the flour with baking powder and a pinch of salt. Add a little at a time to the ricotta mixture, stirring with a spatula or whisk until you get a smooth and homogeneous dough.
Bake the cake

Preheat the oven to 180°C (static oven).
Butter and flour a cake pan of about 24 cm in diameter.
Pour the mixture into the cake pan and level it well with a spatula.
Bake the cake in the oven for about 35-40 minutes, or until it is golden brown on the surface and a toothpick inserted in the center comes out dry.
Cool and serve

Let the cake cool in the cake pan for about ten minutes, then turn it out and let it cool completely on a rack.
Before serving, you can dust the cake with powdered sugar for an extra touch of sweetness.
