Preheat the oven: Preheat the oven to 180°F (350°C).
Prepare the candied fruit: mix the candied fruit and raisins with a little flour to prevent them from falling to the bottom of the cake during baking.
Beat the eggs and sugar: In a large mixing bowl beat the eggs with the sugar until the mixture turns white.
Stir in the butter: Add the softened butter to the mixture, beating well until creamy.
Add the flour and baking powder: Sift the flour with the baking powder and add them a little at a time to the mixture.
Stir in the fruit: Add the candied fruit and raisins to the dough, then mix gently.
Baking: Pour the batter into a buttered and floured cake tin. Bake for 40-45 minutes. Check the cooking with a toothpick.
Tasting: Leave to cool, unmold and cut into slices. Ideal with tea or coffee!
