Roast chicken with preserved lemon and Provençal herbs

Preheat the oven to 200°C (400°F).

Rinse the chicken under cold water and dry it thoroughly with paper towels.

Rub the chicken with 2 tablespoons of olive oil, herbes de Provence, minced garlic, salt and pepper.

Stuff the chicken with the preserved lemon wedges, onion and sprigs of rosemary and thyme.

Place the chicken in a baking dish. Drizzle with the remaining olive oil.

Place the chicken in the oven and allow it to roast for 1 hour and 15 minutes, or until the skin is golden brown and the chicken is cooked through (the internal temperature should reach 75°C / 165°F).

Let the chicken rest for 10 minutes before cutting and serving.
