Peel potatoes and cut into slices or cubes.
Pre-cook in salted water for about 10-12 minutes, then drain.
Meanwhile, finely chop the onion (if using) and fry in butter/oil until translucent.
Add garlic and sauté briefly (do not let it brown).
Add cream and milk/broth, season with salt, pepper and nutmeg.
Add potatoes to the sauce and simmer gently for 5-10 minutes until creamy and well combined.
Garnish with Parmesan cheese if desired and serve with fresh herbs.
Perfect as a main course with salad 
Also delicious as a side dish to meat, fish or tofu
For more flavor: add some lemon zest or thyme to the sauce
