Omelette with pasta, my grandmother’s favorite

Prepare the base: in a large bowl, mix the beaten eggs with salt, chopped chives and parsley. This mix of eggs and herbs will provide an aromatic base for your dish.
Cook the pasta: if you haven’t already done so, cook the pasta al dente following the instructions on the package, then drain it. Add it to the egg mixture, making sure the dough is well coated.

Preparation of the dish: Heat a little vegetable oil in a large pan over medium heat. Once hot, pour in the pasta, egg and vegetable mixture. Cook like a large omelet or omelet, allowing it to settle on the bottom, then stir or gently stir to ensure even cooking and a golden surface.
Serve hot: When the mixture is cooked through and lightly browned, it is ready to serve. This dish is delicious on its own or accompanied by a green salad for an extra touch of freshness.
