🍳 Preparation:
Pat the fish dry:
Dry all the fish and seafood thoroughly with paper towels. This is essential for a crispy result.
Sprinkle with flour:
Place the flour in a large bowl or plastic bag. Add a few pieces of fish at a time, stirring until lightly coated and shaking them to remove excess flour.
Heat the oil:
Heat the sunflower or peanut oil in a deep pan up to 180°C. Don’t fry everything at once, do it in several times.
Frying:
Fry each type of fish or seafood separately until golden brown and crispy (about 2-4 minutes, depending on size). Drain on paper towels. If necessary, keep warm in the oven at 100°C.
Finish:
Sprinkle with salt directly from the oil. Garnish with fresh parsley and serve with lemon wedges.
