Lemon cake: the recipe for a delicious and easy-to-make dessert

1. Preheat the oven to 180°C and grease a non-stick muffin pan with olive oil.
2. In a blender, put the eggs, cottage cheese, salt and several peppercorns.
3. Blend until smooth.
4. Place the spinach in a steamer basket and place it on top of a saucepan filled with 1 inch of water.
5. Bring the water to a boil, cover and steam for 1 minute or until the spinach is wilted. Transfer to a colander and squeeze out excess water. Chop coarsely.
6. Place the spinach in a medium bowl and add the peppers and green onions. Stir and measure out 1/4 cup of mixed vegetables. Set aside.
7. Spread the remaining vegetables evenly into the muffin liners. Pour a scant 1/4 cup of the egg mixture over the vegetables in each well. Divide the remaining egg mixture evenly into the wells. Sprinkle evenly over 1/4 cup of vegetables.
8. Cook for 18-22 minutes or until the eggs are cooked through. Allow to cool for 5 minutes before unmolding.
