150 g spicy Cheddar (grated)

50 g Gouda (grated, for extra melt)

1 tsp mustard (Dijon or medium-hot)

½ tsp paprika powder (sweet)

1 pinch of nutmeg (optional)

Preparation method:

Melt butter: Melt the butter in a small saucepan over medium heat.

Make the roux: Stir in the flour and cook for 1-2 minutes, stirring constantly, until it is light golden yellow.
