First, put the flour in a bowl and keep it warm, then mix the yeast with a little sugar and lukewarm milk. Then make a well in the middle of the flour, mix a small amount of the flour with the yeast and milk to make a thick pre-dough, then lightly dust this with flour.
Cover the bowl with a cloth and keep warm.
Then after about half an hour, when the pre-dough has risen well, you make the actual dough: add sugar, salt and lukewarm milk to the pre-dough and mix everything together.
Then add the warmed eggs, melted butter, and enough milk to form a soft dough. Knead until it bubbles and pulls away from the spoon and bowl. Then return it to a warm place to rise, covered with a cloth.
Now, after about 30 minutes, roll out the dough on the pastry board until it is about the thickness of a finger, cut out squares with the pastry wheel and then bake these in hot lard until they are light brown. Remove from the fat and allow to drain well.
Once cooled, sprinkle the cakes with powdered sugar or cinnamon sugar, if desired. Done!
