3 large apples (about 1 pound or 450g), peeled, cored, and cut into 1/2-inch pieces (Granny Smith or Honeycrisp are ideal)
2 cups all-purpose
flour 1 cup granulated
sugar 1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract

eggs 1/2 cup dark
rum 1/2 cup unsalted butter, melted

Instructions
Preheat the oven:
Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan with butter or non-stick spray.
Prepare the apples:
Peel and core the apples, then cut them into 1/2-inch pieces. Set them aside. Mix the dry ingredients:
In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
Make the cake batter:
In a separate large mixing bowl, whisk the eggs, vanilla extract, and dark rum. Add the melted butter until well combined. Gradually add the dry ingredients and stir until just combined. The dough will be thick.
Combine with apples:
Gently add chopped apples to the dough until evenly distributed.
Bake the cake:
Pour the batter into your prepared cake pan and spread it evenly. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
