Instructions:

  1. Prepare the Filling:
    • Grate the cheese and sausages (or prepare other meat products).
  2. Make the Dough:
    • In a large bowl, mix kefir (or buttermilk) with egg, salt, sugar, sunflower oil, and baking soda.
    • Gradually add sifted flour to the mixture, stirring with a spoon at first and then kneading with your hands until you have a smooth and elastic dough. If the dough is too sticky, add a little more flour.
    • Divide the dough into 16 equal parts and form small balls or cakes from each portion.
  3. Assemble the Pies:
    • Flatten each dough ball into a small circle (about 4-5 inches in diameter).
    • Place a portion of the cheese and sausage filling in the center of each circle of dough.
  4. Seal and Fry the Pies:
    • Fold the edges of the dough over the filling to seal and form a semi-circle or round pie shape. Press the edges firmly to seal.
    • Heat sunflower oil in a frying pan over moderate heat.
    • Place the pies seam side down in the frying pan and fry until golden brown.
    • Carefully flip the pies and fry on the other side until cooked through and golden brown.
  5. Serve:
    • Once cooked, remove the pies from the pan and drain on paper towels to remove excess oil.
    • Serve warm as a delicious main dish or snack.

Note: You can customize the filling by using different types of cheese, meats, or adding herbs and spices according to your taste.
