Creamy lemon squares

Instructions:

1. Prepare the dough (10 minutes):

Preheat the oven to 180°C (350°F).

Grease an 8-inch square baking dish with melted butter.

In a bowl, mix graham cracker crumbs, sugar, and melted butter until well blended.

Press the mixture firmly into the bottom of the pan using the back of a spoon or measuring cup.

Bake for 8-12 minutes or until light golden brown.

Allow to cool completely on a wire rack.

2. Prepare the lemon filling (10 minutes):

In a large bowl, whisk together egg yolks and sweetened condensed milk.

Add fresh lemon juice and whisk until smooth and slightly thickened.

3. Bake and cool (30 minutes + 1 hour):

Pour the lemon mixture evenly over the cooled base.

Bake for 15 minutes or until the filling is just set.

Allow to cool at room temperature, then refrigerate for at least 1 hour to set.

To serve:

Cut into squares.

Serve chilled, optionally with whipped cream for a special treat.
