Brew strong coffee and let it cool to room temperature. In a small bowl, mix the unflavored gelatin with 1/4 cup of cold water. Let it sit for a few minutes so that the gelatine absorbs the water. Heat the gelatin mixture in the microwave or a small saucepan until completely dissolved, stirring well to make sure there are no lumps. Allow the gelatin mixture to cool slightly. In a large bowl, beat the whipping cream until soft peaks form. Add the sugar and continue beating until the mixture is firm.

Gradually add the cooled coffee to the gelatin mixture, stirring constantly. Add the coffee and gelatin mixture to the whipped cream. Stir gently until well blended. If desired, add vanilla extract for an extra kick of flavor. Pour the mixture into individual containers or a large bowl. Store the mousse in the refrigerator for at least 4 hours or until it becomes solid. Decorate with whipped cream or sprinkle with a little coffee powder before serving.
