1. In a large bowl, separate the egg whites from the yolks. Place the egg yolks in a large bowl along with the brown sugar and Greek yogurt. Mix well with a hand whisk until smooth and creamy.
2. Add the sifted cornstarch to the yolk, sugar, and yogurt mixture. Mix carefully until the cornstarch is fully incorporated.
3. In another clean bowl, beat the egg whites until stiff using an electric mixer. The egg whites should form soft but stable peaks.
4. Add the whipped egg whites to the egg yolk, sugar, yoghurt and cornstarch mixture. Mix gently with movements from the bottom to the top to incorporate the egg whites without disassembling them, until you get a uniform and light dough.
5. Pour the mixture into the 18 cm diameter cake pan, previously lined with parchment paper on the base and possibly also on the edges to facilitate the cheese.
6. Place the cake pan inside a larger baking pan and fill the outer pan with boiling water, about halfway up the pie pan, for even baking and to keep the cake fluffy.
7. Preheat the oven to 150°C and bake the cake for 30 minutes. Next, lower the temperature to 140°C and bake for another 30 minutes, or until the surface of the cake is golden brown and a tester inserted in the center comes out clean.
8. Once cooking is complete, turn off the oven and leave the cake inside for another 15 minutes without opening the door, so that it gradually cools down and does not collapse.
Storage:
– Store the Yogurt Cloud Cake for up to four days under a glass bell jar or wrapped in plastic wrap, to maintain its softness.

– Make sure all the ingredients are at room temperature for better dough consistency.
– Use an 18 cm diameter cake pan and line it well with parchment paper both on the base and on the edges to facilitate the cheese.
– Place the cake in the middle of the oven for even baking.
– Add grated lemon, orange, or vanilla peel for an extra touch of flavoring if desired.
