Chimichurri potatoes

1-Peel the potatoes, cut them into wedges and put them in a bowl.
2-Cook them for a few minutes in boiling salted water, stirring occasionally.
3-In the meantime, finely chop the parsley and garlic with a cutting board and knife.
4-Pour the mince into a small bowl and add the oil, vinegar, paprika and stir to have a homogeneous emulsion.
Drain the potatoes and put them in a bowl.
6-Season them with the flavored oil, stirring so as to distribute it evenly over all the potatoes.
7-Place them in a baking pan lined with parchment paper, trying to make them fit on a single layer, then sprinkle them with a little breadcrumbs.
Bake in a preheated convection oven at 180 ° C for 45 minutes.\
8-The chimichurri potatoes are ready, put them in a serving dish and serve them!
