How to make baked potatoes au gratin with Parmesan cheese?
Peel and wash the potatoes, cut them into thin slices and soak them in cold water for about 10 minutes to remove the starch. Drain and dry. Boil the potatoes in boiling water for 5 minutes and drain them in a bowl.
Pour the breadcrumbs onto a plate and add the potatoes, stirring constantly until they are completely covered. Arrange them in a single layer on a baking sheet covered with extra virgin olive oil and cover them with Parmesan cheese. Season with salt, garlic and rosemary.
Preheat the oven to 190° for a few minutes and bake the potatoes at 180° for 20 minutes. Remove the garlic clove, stir with a ladle and continue cooking for another 15 minutes until completely golden brown.
Serve the baked potatoes au gratin with Parmesan cheese hot.
