- Drain the mozzarella and cut it into thin slices. If it is very humid, you can put it to drain in a colander for an hour.
- Assemble the slices:
- Take two slices of bread and place a few slices of mozzarella between them, creating a “sandwich”. Press lightly to adhere.
- Prepare the batter:
- In a bowl, beat the eggs with the milk, season with salt and pepper.
- Breading:
- Dip each sandwich in the beaten egg, making sure it is well soaked. Then, coat each side with breadcrumbs, pressing lightly to make it stick.
- Place in the pan:
- Line a baking sheet with baking paper and arrange the breaded slices. Drizzle a drizzle of extra virgin olive oil over the slices to make them crispier.
- Baking:
- Preheat the oven to 200°C and bake the mozzarella in carrozza for about 15-20 minutes, turning them halfway through cooking, until they are golden and crispy.
- Serving:
- Remove from the oven and let it cool slightly. You can garnish with chopped fresh parsley, if desired.
Advice
You can also add a slice of ham or speck between the mozzarella for extra flavor!
