Preparation :
Preheat the oven to 180°C (gas mark 6).
Prepare the apricots: wash them, cut them in half, remove the pits.
Mix the filling: brown sugar + vanilla sugar + almond powder + flour + salt. Add the apricots and mix gently.
Line the mold: spread the dough in a mold, pour in the filling.
Add the flaked almonds on top.
Egg wash: Brush the edges of the pastry with beaten egg.
Cooking: Bake for 30 to 35 minutes until the pastry is golden and the fruit is tender.
Finish: Drizzle with honey (optional), let cool, and serve.

This tart goes wonderfully with homemade whipped cream or a scoop of vanilla ice cream!
