Prepare the Pork:
Rinse and pat dry the pork leg.
Make small cuts into the meat and stuff them with minced garlic.
Season:
In a small bowl, mix olive oil, mustard, brown sugar, paprika, cumin, thyme, salt, and pepper.
Rub this marinade all over the pork leg generously.
Let it marinate for at least 2 hours (better overnight in the fridge).
Roast:
Preheat your oven to 160°C (320°F).
Place the sliced onions at the bottom of a roasting pan and put the pork leg on top.
Pour the apple cider or chicken broth around the pork.
Cover tightly with foil.
Cooking:
Roast for about 4–5 hours, basting with its juices every hour.
For the last 30 minutes, remove the foil to allow the pork to brown and crisp.
Serving:
Let it rest for 10–15 minutes before slicing.
Garnish with fresh rosemary if desired.
