Preheat your oven to 425°F (220°C).
Wash and dry the potatoes. Using a sharp knife, make thin slices across each potato, being careful not to cut all the way through.
In a small bowl, mix together the olive oil, minced garlic, and chopped rosemary.
Place the potatoes on a baking sheet. Brush the garlic and rosemary oil mixture generously over each potato, making sure to get some oil in between the slices.
Season the potatoes with salt and pepper to taste.
Bake in the preheated oven for 45-50 minutes, or until the potatoes are tender and the edges are crispy.
If using, sprinkle the grated Parmesan cheese over the potatoes during the last 5 minutes of baking.
Serve warm and enjoy!
Variations & Tips
For a cheesy twist, you can add slices of cheddar or mozzarella between the potato slices before baking. If you have picky eaters, try using a milder herb like thyme instead of rosemary. For an extra kick, sprinkle a pinch of red pepper flakes over the potatoes before baking. You can also experiment with different oils, such as avocado or garlic-infused olive oil, to change up the flavor profile.
