Veal blanquette with forest sauce

Ingredients:
1 kg veal shoulder cut into large
cubes 200 g carrots cut into slices
150 g sliced
button mushrooms 100 g spring onions
100 g smoked bacon
2 chopped shallots
40 g butter
2 tbsp flour
1 L hot
chicken broth 20 cl thick crème fraîche
1 egg yolk
1/2 lemon (juice)
1 sprig thyme + 2 bay
leaves A few sprigs of chopped
parsley Salt, ground pepper
